- 1 lb lentils, can be "ready to eat"
- 1 onion, chopped
- 2 carrots, chopped
- 3 stalks of celery, chopped
- Sauté onions, carrots and celery in a small amount of olive oil.
- When soft and onions are clear, add lentils.
- Stir and serve warm or at room temperature.
